Dundrun. Dun… drun… The sound of rough sea against stone and raw materials that feel like they still belong in the sea.
Dundrun Seafood brings the best from the wild seas of the north and brings it to us. Small volumes. Divers and line. Shellfish, shellfish and fish in the center, plus a few selected items from Dundrun's friends at home and abroad, chosen because that's when it tastes best.
The scallops are hand-picked along the Helgeland coast, taken from 5–30 meters deep. The fish is slaughtered according to the Japanese ikejime method, to preserve the quality and enhance the taste. Niklas Johnsen, former Executive Head Chef at Hotel Bristol, and recent Bocuse d'Or coach for Estonia, hosts the kitchen.
We've had a really great collaboration over the past year. Now we're doing what we love best: serving seafood that stands on its own two feet, in the middle of Bergen, with Bryggen in the window. This will be an evening for people who like seafood when it gets to be seafood.
